About Caymus Winemaker’s Dinner

The Caymus Winemaker’s Dinner is hosted in the Crown Grill specialty restaurant and developed with direct input from Chuck Wagner and the Princess culinary team. It brings together family-run Caymus winemaking traditions and on-board fine dining, inviting guests to enjoy expertly paired wines from Napa Valley alongside thoughtfully prepared dishes. The event is limited to 12 guests per seating and typically offered two to three times per sailing depending on itinerary length.

Caymus Winemaker Dinner Menu & Highlights

The curated menu features an amuse-bouche of slow-braised beef short ribs followed by an appetizer of either beef carpaccio or marinated oyster mushrooms. A summer black truffle risotto accompanies the wine pairing with Caymus-Suisun Red Blend. Main course options include a prime beef tenderloin tournedos Rossini paired with Caymus Napa Valley Cabernet Sauvignon or a seared king salmon and giant prawn dish matched with Sea Sun Pinot Noir. A cheese and charcuterie course allows guests to select a wine pairing, and dessert is a rich chocolate raspberry mousse served with Emmolo sparkling wines.

The Winemaker Dinner carries a specialty dining cover charge of approximately $140 per person, with an 18% automatic service charge applied. The fee includes the full six-course meal, wine pairings selected by Chuck Wagner, and personalized service from sommelier-led wine experts.
